Tickles’ pickles are made from fine, fresh vegetables, a little sea salt and nothing else. Our magic ingredient is lactic acid bacteria. These friendly bacteria are naturally present on vegetables, we encourage their growth by creating an acidic, oxygen-free environment. This process of natural fermentation gives our pickles their distinctive zing.
Tickles’ Pickles kimchi is made from an authentic Korean recipe using traditional Zen Buddhist methods which are naturally vegan. Made in north London in small batches, this kimchi is cut by hand, using only the tender leaves of the cabbage, never the core. It is perfectly balanced: slightly spicy, sweet and crunchy. Full of beneficial probiotic bacteria.
